Key Responsibilities: Visually inspect the carcass before beginning disassembly. Disassemble carcasses into individual parts as per product specifications. Separate meat, fat, and tissue from bones, and trim any visible foreign material and blood from meat cuts. Understand and diligently work to meet the yield requirements for each cut type. Thoracic Stick Procedures: Stick the animal as per regulations, ensuring proper procedures are followed. Ensure contamination is contained using rod and clip methods. Utilize flay knives for pelt removal and conduct necessary procedures to remove internal organs and internal fat deposits. Adhere strictly to HSE instructions and food safety requirements within the production environment.

Job Requirements
Must be physically fit, capable of lifting up to 25kg, and standing on feet for 8-12 hours per shift. Must pass a pre-employment medical and drug test. Must be able to pass a Ministry of Justice background check. Excellent communication and interpersonal skills Must have at least one work reference. If straight out of school, a character reference is required. Reliable transport is essential. Must be able to get to and from shifts. As this role involves working evening shifts, a full Class 1 driver’s license is required. Must be able to work evening shifts from 3 PM to 1 AM, Monday to Saturday when required.
