About this job
Being responsible for overall restaurant operations, ensuring wait staff and kitchen are effectively performing, ambience is maintained, and all liquor licence requirements are met. Regularly reviewing staffing levels for upcoming shifts and the week ahead, adjusting as needed. Addressing staff performance issues promptly by explaining errors, why they are unacceptable, and documenting them for follow-up. Supporting daily operations during busy periods by assisting with bartending, waiting tables, and dishwashing when required. Maintaining accurate beverage inventory, ensuring stock lists are always up to date. Checking incoming stock thoroughly, including wine vintages and varietals, ensuring alignment with the beverage list. Filing invoices correctly, organising stock appropriately, and reporting discrepancies to management. Overseeing all bar operations, ensuring consistency in presentation, glassware, taste, texture, and temperature. Managing stock ordering and control, adjusting for seasonal demand (e.g. peak periods or quieter months). Ensuring daily cleaning tasks are completed, with cleaning rosters signed off and reported to the Restaurant Manager. Handling guest and staff complaints or emergencies efficiently and professionally, with a focus on resolution and customer satisfaction. Training and mentoring staff, correcting mistakes with clear reasoning, maintaining high standards, and reinforcing the restaurant’s ethos and expectations. Reporting any breaches of staff contracts to senior management. Maintaining accurate cash handling procedures, investigating discrepancies, documenting issues, and following company policies for handling cash, stock, and equipment. Ensuring all necessary supplies are available and bar standards are consistently met in terms of cleanliness, stock levels, and product knowledge. Maintaining knowledge of alcohol regulations and holding required qualifications (LCQ and relevant experience). Ensuring staff have strong product knowledge across food and beverages, including origins and pairing concepts, and continuously developing their understanding. Delivering a high level of customer service, encouraging staff to engage with guests to anticipate and exceed expectations. Resolving complaints efficiently to retain customer loyalty. Providing leadership to ensure compliance with standards, assigning duties to meet sales, service, quality, and cleanliness objectives. Monitoring wage costs and adjusting staffing levels during quieter periods. Managing operations with integrity, professionalism, and enthusiasm while promoting the restaurant’s culture. Overseeing events, functions, and live entertainment to ensure they are properly staffed and executed. Maintaining a professional, safe, and positive environment for both staff and customers at all times.
Job Requirements
Good interpersonal skills. (client contact/relationships, staff, and mangers/owners’ relationships). This means that you deal with each group to the standards the manager has set out. For example, Client interaction is to be friendly/polite. Owner interaction is to be professional, honest, reliable. Staff interaction is to be professional, honest, motivational, strict
Good communication skills. Communication is the key to our success if we know of any problems or potential problems, we can fix them or help find a solution. We must all be aware when something is broken or not working i.e., vacuum cleaner, wine gas, steam mop, stamp.
Neat physical appearance. You are the standard of all staff if you don’t look smart or not presented as we have set out to you then all staff will follow.
Reliability. This is one of the most important attributes for a duty manager, when needed they are needed. If someone falls sick or bookings determine more staff needed to allow the service to stay at the desired standard, the manager and in turn the duty manager are the first points of contact. If you can find a staff member to fill in, then you are ultimately responsible.
