Looking for an experienced Sushi Chef to join our busy Japanese takeaway/restaurant team.
Duties include: - Preparing and cooking sushi ingredients to order in a fast-paced environment. - Deep frying items (Tempura, Katsu) whilst maintaining strict oil temperature and batter consistency standards. - Preparing sashimi for both nigiri and maki sushi. - Assisting with the assembly and cutting of sushi rolls during peak times. - Preparing ingredients (washing rice, cutting vegetables, portioning meats) before service. - Maintaining high standards of kitchen hygiene, cleaning equipment, and organizing storage areas. - Following standard recipes to ensure consistent food quality and speed of service.
Job Requirements
- Must pass an MOJ check and drug testing. - Essential: Minimum 6 months of proven experience in a commercial kitchen specifically preparing Japanese cuisine. - Applicants must be able to demonstrate: Competence with Japanese deep-frying techniques (Tempura/Katsu). - Must be competent in sashimi grade fish breakdown and filleting. Speed and accuracy in a high-pressure environment. - Ability to work split shifts (lunch and dinner services) and weekends.
