Employer is seeking an experienced and passionate Head Chef to lead their kitchen team and elevate their culinary offerings. The ideal candidate will be innovative, organized, and capable of managing a fast-paced kitchen while ensuring quality and efficiency.
Key Responsibilities:
Create, oversee, and maintain a structured and dynamic menu selection that evolves frequently to reflect seasonal produce, sales trends, events, and racing. Lead, manage, and provide direction to kitchen staff, setting a high standard by example. Handle all ordering of food, consumables, and other relevant items for the OTT kitchens. Develop and enforce establishment policies and procedures, including uniform standards, hygiene, and adherence to the Food Control Plan (FCP). Maintain rigorous food safety standards in all preparation areas. Develop and price specials to meet establishment standards, ensuring cost-effectiveness. Ensure all kitchen equipment and workspaces are functional and well-maintained. Manage food and labor costs in alignment with business requirements. Oversee stock management, including rotation and accurate stock counts. Organize and manage all food preparation areas to ensure seamless kitchen operations. Ensure Burger Joint is adequately staffed and stocked at all times. Implement systems for efficient stock input and monthly food stocktakes. Ensure full compliance with the FCP (Food Control Plan) and all relevant regulations.

Job Requirements
Minimum 5 years experience in the kitchen Previous experience in a similar industry, preferably in a leadership role. Strong technical cookery skills and excellent knife proficiency. Exceptional communication and organizational abilities. Ability to give clear instructions and effectively lead a team. Commitment to excellence, teamwork, and maintaining establishment standards. Ability to perform competently under pressure in a dynamic environment. Reliability and flexibility to adapt to changing needs.
